The concept, which was announced in July when Gruel chose to sell his original restaurant chain Slapfish to private equity and leave the company, is full-service, a first for Gruel.

The menu is chef curated and will have rotating proteins, depending on what fishermen driving up to Long Beach pass by the restaurant to drop off each day. The restaurant sits at the corner of Admiralty Drive and Pacific Coast Highway in Sunset Beach, taking the spot of Fish Camp, a seafood restaurant that closed last year. Calico is named after the Calico Bass which is native to Southern California waters. The restaurant seats about 55 people inside, including a full bar in the middle of the dining area, and 80 people outside. “We’ve got fishermen that fish out of Long Beach, live in Huntington Beach, drive by the restaurant every day and drop seafood off for us,” Andrew Gruel said. Group reservations may not be scheduled the Friday prior to or during event weekends.
Gruel’s emphasis on sustainably sourced food began at Slapfish, but has continued at all his restaurants. The restaurant serves seafood, yes, but also steaks, salads, sandwiches and a diverse variety of other items. The menu changes weekly now, but daily is the goal in the not-too-distant future. It’s a seafood chophouse with an emphasis on sustainable (certified by the Aquaculture Stewardship Council) fish and a full bar. The menu changes daily, based on what’s in season and available, and guests can choose their main and sides, like a steakhouse. Sides are more creative than the typical creamed spinach or sauteed asparagus, and might include dishes like a lobster-stuffed baked potato, for example, or pretzel-crusted crab tots. The menu is centered around grilled à la carte proteins including fish, meat, and poultry served with 10 different sauces made daily. Shareable plates include house baked rolls with sweet lobster butter, lobster corndogs, Angry Lobster Pockets, and pretzel crusted crab tots.
Restrooms are located outside; showers located in the campground. “It’s the opportunity to be able to constantly change the menu and play with ingredients and now in a full-service environment,” he said of creating flexibly versus being held to a more corporate standard. However, the couple isn’t focused on big cities like Los Angeles or New York. Future restaurants will be in touch with local communities in smaller coastal regions, similar to the Sunset Beach flagship, Lauren Gruel said.
Until then, Calico Fish House is hosting a recipe contest, in which entrants are invited to submit a recipe that will be included on the menu for a year. The winning recipe will be named after the winner, who will also get to have that dish for free every time they visit the restaurant. The seafood offering is different each time, according to Gruel. Gruel said that he wanted to diversify the menu and level up from Slapfish, but keep the same culinary principles. He noted that the best-performing Slapfish was in Indiana.
